Vegan Veggie Burgers

Black Bean Surprise

Ingredients:

2 cups black beans

2 grated carrots

1/2 cup rolled oats

1/4 cup pumpkin seeds/sunflower seeds

2 tbsp olive oil

1/2 coriander

1/2 tsp chili powder

1/2 tsp pepper

Salt to taste

Preheat your oven to 300 degrees Fahrenheit. Add the oats and the pumpkin seeds in your mixer and grind until mixed well. Add in the grated carrot to the mixer. Add 1 1/2 cup of the beans, all the spices and the olive oil. Run in the grinder for a minute until mixed completely. Empty the mix into a bowl and add in the remaining 1/2 cup of whole beans. Wet your hands and form the mix into 6 small patties. Bake this for around 30 minutes. You can reheat them on the pan. Add in veggies and sauces of your choice while preparing the burgers.

Chickpea Burgers with Hot Sauce

Ingredients:

2 tbsps ground flaxseed mixed in 6 tbsps of water

3 cups chickpeas

1 cup chopped celery

1 cup chopped cauliflower

1/2 cup chopped spring onions

1 cup rolled oats (gluten free)

1 cup semolina

1/2 cup barbecue sauce, mixed with chilli sauce (you can also use buffalo sauce if available)

Salt and pepper to taste

Mix the ground flaxseeds and the warm water and leave aside for ten minutes. Chop the chickpeas and add in the chopped celery and cauliflower in the mixer. Grind until you get a thick, chunky paste. Place in a mixing bowl. Add in the chopped spring onions. Lastly, add in the sauce mix, semolina and the flax mix. Mix all the ingredients together with your hands until you get a nice, firm mash dough. Form the dough into 4-5 patties and cook on medium heat with a gentle brush of oil for 5-10 minutes to get a golden patty. Add in veggies of your choice while making the burger.
