Healthy Sandwich Recipes

These low fat sandwich and wrap recipes are super duper healthy but don’t compromise on taste.

Pulled Chicken Sandwich

Ingredients

  • 2 tbsp tomato sauce
  • 1 tbsp home-style mustard
  • 1 tbsp molasses
  • 1/2 tbsp ground cumin and black pepper
  • 1/2 tbsp chilli powder
  • 1/2 tbsp ground ginger
  • 10 ounces boneless chicken cut in pieces
  • Bread slices, wholegrain

Method

Combine the tomato sauce, mustard, molasses, chilli powder, cumin and pepper, ginger and chicken in a saucepan. Add in 1/4 cup water. Bring to a boil. Reduce the heat to medium and let it cook till the chicken is done. This will take around 20-25 minutes. Remove the mixture from heat. Split the mixture into 1/2 cup portions while making the sandwiches.

Roasted Chickpea Sandwich Wrap

This definitely is one of the healthiest wraps to eat during lunch break.

Ingredients

  • 1 1/2 cup soaked chickpeas
  • 1 tbsp olive oil
  • 1 tbsp ground black pepper
  • Salt to taste
  • 4 whole grain pita breads
  • 1 cup hummus/tahini
  • 1/4 red onion chopped
  • 2 lettuce leaves
  • 1 sliced tomato

Method

Remove the skins from the chickpeas. Toss the chickpeas with the oil, pepper and salt in a bowl. Place the mixture on a greased baking tray and bake at 180 degree Celsius for around 15 minutes and brown. Make sure they don’t become hardened. Spread the hummus or tahini on the pita bread. Sprinkle some of the chickpeas on the bread. Add in the onion, tomato and lettuce. Top it up with some more hummus and wrap.

Avocado Toast

Ingredients

  • 2 slices whole grain bread
  • 1/2 ripe avocado
  • 1/2 tbsp parmesan cheese
  • Chilli flakes
  • Salt to taste

Method

Scoop out the avocado from the shell and mash with a fork. Add in the salt and chill flakes. Toast the bread slightly. Spread the mixture on the toast while still hot. Top it off with sprinkles of Parmesan cheese.
